Does anyone know what type of heads Carter uses on stage?

I believe Mr. Beauford uses Evans heads live and in studio. As to what ply they are, I'm not sure. Try checking out his equipment list on the official site to see if they list it.

Carter plays Evans drumheads. As for type:

TOM BATTERS: Genera G2 Clear

TOM RESONANTS: Black Resonants

SNARE BATTER: Switches between a Genera G1 and G2 coated

SNARE RESONANT: Hazy 300

BASS: EQ3 Bass System
