Their best album in my opinion is "Why Should the Fire Die", i think their best songs are "When in Rome" and "Can't Complain" and they're both on there. If you like that give a listen to "Nickel Creek" and after that go for "this side". Somewhere in there check out Thile's solo album "how to grow a woman from the ground", its in a similar vein.
If you like jazz and more experimental stuff, check out any of the "Punch Brothers" albums. They are some of the best musicians out there and they follow no rules and come up with some seriously interesting and exciting music.
