Have you listened to the Unplugged album? It may sway your overall opinion. You're right though, musically they are fairly simple. But so was Johnny Cash. So is Bob Dylan for the most part. I hate to be cliche but its all about the energy and authenticity communicated through the music that made them special.
That said, they are absolutely, 100%, overrated as musicians. That isn't to say they aren't/weren't talented or didn't create some amazing material because they are and they did. But their place in the history of music is solidified not necessarily because they were musical virtuosos, but rather because of their impact on the musical landscape in the early nineties. Its all about context with Nirvana.
EDIT: Personally, I would rather listen to AIC or PJ any day of the week over Nirvana
