I did two quick maps for you. One, a closer view on the downtown where you'll be staying. Pretty much everything happens along Elm St...which is where your hotel is located...and I highlighted the street on the map. There are a ton of restaurants along that street. I've highlighted a couple of ones that folks have mentioned like StrangeBrew, Firefly, because those are off Elm St. There's also a boards and brews bar on Elm that might be handy for conversation starting with other Manchester folks. I also highlighted the art museum, the local history museum. Everything in this map is a 10-15 minute walk.
The second map is a larger view of the Greater Manchester area for your extended stay. Boy, it's really going to depend on the weather. If it's nice, you can do some easy hikes locally. If it's not, well, come back and we'll talk about other options. Mount Uncanoonuc is the bump on the horizon and can be a decent walk in the woods. Also the Audubon society has a great trail that leads to water views. I highlighted Livingston Park. It has a 1 mile path around a pond that's a nice way to walk off your meal from the Puritan Backroom right across the street. That is a restaurant others have mentioned. It's a bit of a Manchester icon (similar to the Red Arrow Diner which is where all the famous and political people go). They are known for their chicken fingers and amazing mudslides. Mudslides are strong and filling...be warned. When Adam Sandler is in town, he eats here. I also highlighted the mall area and the city disc golf course.
Manchester is centrally located. Boston is only an hour away without traffic. Portland, ME 1.5 hrs, Portsmouth, NH 45 mins, or a trip up to Vermont (biking in the Northeast Kingdom (2.5hrs) is amazing) is also easy to make.
If it's a mild winter, you may be able to do some hiking in the White Mountain National Forest. If you're into skiing there's a bunch of places to ski from Lincoln over to North Conway and in between. It's worth taking a ride up I-93 and over on route 302 to go through the two notches in the mountains. 1.5 hours to Franconia Notch and a half hour further to Crawford Notch. Beautiful scenery and you'll be able to see Mount Washington. Weather dependent on what you'll be able to do while you're up there.
