I saw it as some sort of higher level of awareness. The show began with a fly crawling over the eye of one of the androids, and it didn't even blink.
Earlier in the episode it was said that Anthony Hopkins had been secretly manipulating code and adding specific, nuanced responses to the hosts. However, I would guess that Hopkins manipulations go far beyond nuanced, pre-scripted responses. He is rewriting the base code for the hosts, giving them a sentient awareness, which leads to the more lifelike responses, such as slapping the fly.
