If you've never been to the lake before and don't mind spending a bit on money, the Heavenly Gondola takes you up to a pretty epic view of the lake. It might not run midweek in the off season though.
The drive to emerald bay is great, and both inspiration point and the vikingsholm parking lots have great views. From the vikingsholm lot its an easy, but watch out while dodging traffic on the highway, walk over to eagle falls. Eagle lake is a very short hike from there, but hike not walk as there is some up and down and the surface isn't a simple walking path. The hike down to vikinsgsholm (huge old wooden house/castle thing) is great, but coming back out at that elevation is moderately strenuous.
Sand Harbor has the best water for paddle boarding, swimming, staring down into the depths, not too far of a drive from Stateline.
For a quick morning/afternoon spin that should get you started. Let me know if you'd like more suggestions.
