Re: BBQ/Smoking/Grilling

I get great results with my gas grill and smoker box following the tips on www.amazingribs.com but I do look forward in the future to adding a dedicated smoker and I would definitely like to do it that way and not buy a smoker.

I did a lot of research over at www.bbq-brethren.com prior to building. Still get tips and love looking at creations over there, both food and smokers.

Im excited this year for I am getting a new charcoal grill to replace my old one. Very pumped for the first grill of the year, just not sure what to make. I'm thinking about some kabobs, or maybe some good flank.

    Re: BBQ/Smoking/Grilling

I made myself an Alton Brown flower pot smoker. He did it for an episode of Good Eats. I used a large standard terra cotta flower pot from Home Depot (I think it was 18") for the base and a terra cotta azalea bowl as the top. I got a single electric burner from Amazon and took it apart so the element could be at the bottom of the flower pot and the controls for the burner underneath (on the outside) the flower pot. Then I just have a heavy duty cake pan for the wood chunks directly on the burner and a standard grill grate at the top.

I've done two pork butts so far and they both have been excellent. The terra cotta is great because it is a good insulator (think Big Green Egg or other ceramic smoker) so it doesn't lose a lot of heat. The outside of the flower pots are warm, but you could hold your hand against it no problem. I can keep it right at 220 degrees no problem, and can get it hotter or cooler if I need to.

Our townhouse just put a ban on any sort of grilling on decks this last fall. Fortunately we're only renting so I'm not that ticked (and bc I don't have a grill)... but I feel bad for everyone that has lived there for awhile that now has to grill in their driveways. That being said, I still miss cooking my meats outside.

Fully support this thread. I do a ton of BBQing regardless of the time of year. I gave up on gas a couple years ago and now just use a weber and 2 smokers. Experimented this past weekend with maple brined cornish game hens. Damn good stuff!

6lb shoulder? Did it come off a suckling pig?

I just picked up a neat little grill a couple of weeks ago called a Cook-air grill. Uses hardwood chunks for fuel and cooks super hot/fast. I can get really good sear on steaks/burgers now and still keep them med-rare

Did a whole prime rib in the smoker for Easter brunch. Used a nice salt/sugar/garlic based rub and injected with both a bottle of Butcher BBQ Brisket Injection and a good amount of minced garlic. Pull it from the smoker when it hits around 115-120 and finish it off in a 500 degree over to really get that nice crust on the outside. Came out absolutely melt in your mouth perfect.

Depends how serious you are. I have a barrel style with a firebox that I bought for around 150 that does me great. Others swear by green eggs that can get a little pricey

Weber Smokey Mountain 22.5 inch. No question. The absolute best smoker for the money. Not only that, it retains value if you decide (in the very unlikely event) you don’t like cooking BBQ. I’ve had 9 different smokers (even had a sponsorship from one) and I will always recommend a WSM
