I can give you my list that, after having Android for over a year and a half, I've narrowed down to the essentials, having gotten rid of all the apps and games I only used for a couple weeks/months.
Kroger - if you're a Kroger customer, it's great. Or maybe your grocery store has an app

ColorNote Notepad notes - one of the best-rated notepad apps. I use mine daily. Keep a running list of groceries that I then use at the store, plus one for the other stores I usually go to, plus a list of all the meals/recipes we make so we can reference them, list of movies on our "to-see" list, lists for packing for trips, etc etc
Disc Caddy - for keeping score in disc golf
Dolphin Browser - still (I believe) the best browser on Android
Draw Something Free - favorite game, though I only play it on my tablet nowadays

Facebook - the app actually sucks, and now I only use the mobile site through the browser
Fly Delta - if you're a Delta customer usually, great for checking in, changing seats, and e-boarding passes

My Tracks - works with google maps/GPS, I use this a lot to track walks/runs/bike rides to see them on the map and know the distance and stuff
QuickBoot - this is an app that allows to you shut down your phone, reboot it, reboot it in safe or developer mode from just the touch of an icon. I only have this because the on/off/lock button on top of my phone broke, but it's actually a bit handier than the way you'd normally do it (power button and volume up)
RemoteDroid - awesome app I've recommended in here, or another Android thread, before. Install it and some software on your computer, and your phone turns into a mouse (and keyboard) via your home wifi network. I have my computer connected to my TV, so that's when I use it

SilentMode On/Off - little widget I have on my homescreen to quickly turn to vibrate, silent, and sounds on
Google Sky Map - neat sometimes
Spaghetti Marshmallows - best game, first and only other game I've paid for besides Draw Something
Timeriffic - excellent. Have your phone change settings automatically for time of day, location, etc. I use it pretty basically, to automatically turn my phone to silent at the time I head into work, and back on when I leave. Then again to turn the volume and screen brightness down at a certain point late at night, and then back to full volume in the morning. It can do lots more as far as wifi, bluetooth, etc
