    You will not be disappointed. I had 2 of them going this weekend and one I was using at a 170 degree 'holding' temp (forgot my holding cooler). It held steady at 170 all day.

    I wasted a lot of money early on trying to 'save' money when buying smokers. Bought a few $200ish models... I wish I would've just gotten a WSM right out of the gate. Would've saved myself some loot on cookers as well as fuel! I was using probably 4 times as much fuel with other 'cheaper' cookers.

    Step 1: Get rid of the propane smoker
    Step 2: Get one that runs on charcoal/wood
    Step 3: Cook good ribs

    The 3-2-1 method is pretty foolproof for your first time. (Some do 3-3-1.) You'll find tons of the debate and obviously everyone has their own tweaks (which you'll develop too the more you do it.)

    3 hours in the smoker (with your rub applied beforehand of course.) Remove from the smoker, then wrap them in foil (add a little liquid to each foil pack - honey, beer, agave nectar or a mix all work!)

    2 more hours in the smoker in the foil. Then pull them again, remove the foil, and put a light brushing of sauce on (assuming you are using sauce, you can also apply some more rub if going for dry.)

    1 final hour in the smoker to finish off and get that nice crust on the outside.

    Obviously none if this is an exact science! But this method will produce solid results pretty much every time, and then you can make adjustments based on your own preferences.

    3-2-1 at a temp of 225-250.

    I've been doing mine a little faster at 275 lately and I'm loving the results. It's more like 3 hours on the smoker, 1 hour wrapped and then they are 'done'. Crank the cooker up (or a grill) and throw them back on for 10 mins or so to let the sauce set.

    Gonna do some ribs and a brisket on Mother's Day (we host 'Meat For Mothers' at our place annually ), maybe I'll try the higher temp, I usually do 225. Do you find you get the good crust on the outside without that last hour out of the foil? Do you just not add sauce until they're done? (Assuming you use sauce.)

    Yeah... I mean, the 'crust' really sets in in that initial ~3 hours. I do add just a bit of sauce when I unwrap them (mixing and mopping with some of the juices in the foil). Then they go back on just to tighten them back up for maybe 10 mins or so depending on how hot the grill/smoker is.

    I've done Prime Rib in the smoker the last 2 Easters and it comes out AMAZING. For whatever reason it's not a super popular cut for smoking the way ribs or brisket are, but smoking really takes it to the next level.

    Yeah, this was the first time I tried it and I was pleased with the results.

    I will say that I think a full smoke was a bit much. I think next time I'll do half in the smoker and then finish in the oven. I like the hint of smoke with red meat but not as much smoke as I do with pork or chicken.

    I'm not a huge fan of the look, but I'll consider it. Saw on reddit where some people's Char-Griller 1515 Patio Pro is a good for the price.

    I had a similar one a while back... it's not bad, but it's not built to last like a weber. The charcoal pullout jobber will be warped and not function properly after a few cooks.

    Got a ton of meat ready to go for our annual "Meat for Mothers" BBQ tomorrow. 13 pound full brisket, 3 racks of baby backs, and a couple pounds of pork belly that I am going to cube up to do pork belly burnt ends all in the smoker. Gonna put the brisket in around 2 AM tonight and then the rest around 8 AM tomorrow. Also made 8 pounds worth of my chorizo burgers (about a 60/40 blend of beef and chorizo + spices and some egg and breadcrumbs to bind the mixture, I swear by these burgers!) Brats, italian sausages, hot dogs, chicken drumsticks, and some thin marinated steaks ready for the grill. Even got some nice bacon wrapped stuffed jalapenos from the meat market. No one is going hungry tomorrow!

    Brisket has been on since about 2:45 this morning and looking and smelling great! It was a little big for my smoker so I sliced off the end of the flat and did that on a separate rack and it'll make some great burnt ends.

    I had a gig with my band last night and got home about 2:15 AM, got rub on the brisket and in the smoker, and prepped the ribs and pork belly. Had a little something to eat, got to bed at about 4:30 AM,and got up at 8:30 to get the ribs in. Glad I took tomorrow off work cuz I am going to be absolute toast by the time this BBQ is over.
